But while most visitors automatically think of Aperol's bright orange color, connoisseurs in Venice order the original: the Spritz al Select.
What is Select? Select is a reddish bitter liqueur that was created in 1920 in the Venetian district of Castello was created. It is the heart of the classic Venetian Spritz. Its flavor is more complex than that of Aperol—slightly less sweet, but spicier, with a subtle hint of bitterness that pairs perfectly with the salty appetizers (cicchetti).
The original recipe: A traditional Spritz al Select consists of:
- 3 glasses of Prosecco (or dry white wine)
- 2 Parts Select
- 1 splash of soda water
- A green olive: That's the hallmark! While an orange usually floats in an Aperol Spritz, a Select Spritz absolutely must have a large green olive.
Why you should try it: When you order a Spritz al Select, you immediately show the bartender that you’re familiar with the local culture. It’s the more sophisticated, less „sweet“ version of the classic. Plus, by doing so, you’re supporting a piece of Venetian industrial history.
My advice to you: Enjoy your aperitivo where it's most beautiful: right by the water. Find a bar in Cannaregio (along the Fondamenta della Misericordia) or in Dorsoduro on the Zattere waterfront. Order a few cicchetti, and you'll experience the authentic Venetian atmosphere that no guided tour can offer.
